As far as I can tell, the class that isn't found for you is part of
xalan, and for some reason ant tries to load it when evaluating the
<xslt/> element. I'm not sure why it would do that, and it doesn't seem
to happen for me.

Still, could you try putting a xalan.jar on your classpath manually?
